✨ Ingredients
2–3 pol rotti (grated coconut in the dough for extra flavor)
2 medium potatoes, boiled and mashed
1 medium onion, finely chopped
1–2 green chillies, chopped
½ tsp turmeric powder
½ tsp chilli powder
Salt to taste
Oil for shallow frying
Optional: a pinch of curry powder or chopped coriander leaves
🥣 Method
- In a pan, heat a little oil and sauté onion, green chillies, turmeric, chilli powder, and salt until fragrant.
- Add the mashed potatoes and mix well. Cook for 2–3 minutes until the flavors combine. Let it cool slightly.
- Take a small portion of pol rotti, flatten it in your hand or on a board.
- Place a spoonful of the potato–onion filling in the center and fold into a patty, sealing the edges gently.
- Heat a little oil in a pan and fry the patties until golden and slightly crispy on both sides.
