✨ Ingredients

2–3 pol rotti (grated coconut in the dough for extra flavor)

2 medium potatoes, boiled and mashed

1 medium onion, finely chopped

1–2 green chillies, chopped

½ tsp turmeric powder

½ tsp chilli powder

Salt to taste

Oil for shallow frying

Optional: a pinch of curry powder or chopped coriander leaves

🥣 Method

  1. In a pan, heat a little oil and sauté onion, green chillies, turmeric, chilli powder, and salt until fragrant.
  2. Add the mashed potatoes and mix well. Cook for 2–3 minutes until the flavors combine. Let it cool slightly.
  3. Take a small portion of pol rotti, flatten it in your hand or on a board.
  4. Place a spoonful of the potato–onion filling in the center and fold into a patty, sealing the edges gently.
  5. Heat a little oil in a pan and fry the patties until golden and slightly crispy on both sides.
